    Morning folks.Wet, cold and nasty out. No snow here. Booneville and the northern counties had some. Ground is much to warm for it to stick. It’s going to be a long winter I think.

    Cold here, too.
    I think we’ve got the venue for the reception nailed down: Ocean Springs Community Center. That’s the one with the Walter Anderson murals on almost every available surface.

      That will be beautiful, MrsH. I talked to a friend this morning whose daughter just had her wedding reception at the Pearl Community Center and she said it was beautiful, and we don’t even have any Walter Anderson.

    Clucky, does M still have her tonsils? My elder daughter used to get strep A LOT – like five times last school year. Yanked the tonsils in July and she hasn’t been sick a day since, not even a cold. Second best thing we ever did for her after ear tubes.

    Here’s a lemon ice box pie that is totally yummy. Easy to make.

    Zesty Lemon Pie

    Use store bought graham cracker pie shell. 9 or 10 inch.

    6 egg yolks
    2 (14 oz.) cans sweetened condensed milk
    1 cup fresh lemon juice. (5 to 6 lemons)

    1 cup whipping cream
    2 Tbsp powdered sugar

    1. Preheat oven to 350.
    2. Whisk together egg yolks, sweetened condensed milk and lemon juice and pour into pie shell.
    3. Bake at 350 for 15 minutes. Let cool completely on a wire rack. (About an hour) Cover and chill 4 hours.
    4. Beat whipping cream at high speed with an electric mixer until foamy; gradually add powdered sugar, beating until soft peaks form; dollop over chilled pie.

    Note: You can use bottled lemon juice, but the pie tastes much better if you squeeze fresh lemons.

      This is one of my favorite pies. Works well with limes, too.

      This is exactly like the one I’ve made for years with 3 egg yolks, 1 can condensed milk and 1/2 cup fresh lemon juice except that I use the egg white to make meringue for the topping. This just doubles the old standard and uses whipped cream and nothing tops anything any better than real whipped cream. Fresh lemons make all the difference in lemon ice box pie. The bottled lemon juice just doesn’t get it for a pie.

      Go see the doctor like I did today, Barb! I feel your misery and have been fighting this crud since Wednesday with over the counter meds. When I started running a fever last night then I knew it was time…actually feeling better this afternoon thanks to good drugs. Doctor said I have bronchitis and not the flu thank goodness! I hope you get better soon.

    I hope you feel better too, CornPop and Barb. That bronchitis is horrible stuff. I had it 2 years in a row and had never had it at all before, so the next year I got a pneumonia shot and I’ve never had bronchitis since.

    Clucky, we’re back, but I don’t see an e-mail.???
